My favorite healthy snack lately, warm olives.

Perfect for a lazy weekend afternoon or a pre-dinner blood sugar stabilizer.

Warm olives layered with toasted spices, fresh rosemary, garlic, and lemon peel. They’re super easy and you’ll never want to eat olives another way again.

I can easily eat the whole bowl, which I’m ok with because olives are a great source of healthy fat and polyphenols which help improve blood sugar control and insulin sensitivity.

Here’s how to do it:

Grab a jar of your favorite olives, I love castelvetrano - drain olives and set aside.

In a small skillet over medium heat, toast your fav spices until they are golden brown and fragrant (be careful not to burn, they toast quick!) I like cumin and fennel seed about 1 hearty tsp of each.

Once spices are toasted, add your olives, lemon peel from one lemon, 3 garlic cloves smashed, sprig of rosemary - stem removed. Give the pan a fews swirls and add about a 1/4 cup good olive oil. Heat until olive oil starts to bubble and the kitchen smells delicious.

Enjoy olives in the sunshine with your favorite sprtizy beverage & bonus save the leftover oil and goodies to make a future salad dressing.
